BEER TASTING MENU

Pearl has launched an exquisite tasting menu paired with a selection of gourmet beers.  The menu, created by Executive Chef Jun Tanaka has been expertly matched with beers from around the world by beer gourmand, Gustavo Bertolucci.

The tasting menu features L’Aiguille Blanche Wheat Beer from Savoie, France and Mort Subite Lambic Kriek, a cherry beer from Lierput, Belgium, the perfect pairing for a mouth-watering dessert.  Other beers included on the menu have been sourced from Belgium, Australia, Ireland, Spain, France and Scotland.

 

SCALLOPS

Caramelised scallops and ginger with Yorkshire rhubarb, crisp pork belly

Sommelier selection: Meantime Wheat Beer (Greenwich, England) 6.3%

this wheat beer comes with finely balanced flavours of fruit, cloves and hops

WINTER VEGETABLES

warm salad of honey roast parsnips, celeriac and broccoli with walnut pesto, roquefort dressing

Sommelier selection: Jenlain Blonde (Jenlain, France) 6.0% A  malty blonde ale with a floral aroma and a hint of caramel

BRILL

Brill with oyster tortellini, cockles and caviar, cucumber spaghetti and seaweed, chervil veloute

Sommelier selection: L’Auguille Blanche (savoie, france) 5.0% A  herbaceous wheat beer is a perfect match for this fish dish

LAMP

Poached canon of Elwy Valley lamb with boulangere potato feuilletine of the breast and rosemary consomme

Sommelier selection: Innis & Gunn (Edinburgh, Scotland) 6.6% An oak aged ale giving aromas of vanilla and toffee with a malty finish

PRE-DESSERT

PEARS

Poached pear williams in sauternes jelly, milk chocolate mousse and vanilla ice cream

Sommelier selection: Ecusson Grand Cidre (Normandy, France) 4.5% The fruitiness of the apple cider enhances the flavour of the pears
